Kiwi love

I had sucha busy day today and I could not be happier to be home at 10pm in Saturday evening, watching Modern Family. Honestly these are my favourite kinda nights, just proper me-time. If I would have some more energy I would love to pamper myself with facemask or manicure -- well maybe I find some strenght later on. Lately I have been living in this crazy schedule, partially because of my work, and it has really took a toll on my beauty routines. Somehow basic routines have become more time consuming and stressful. Last night was great thought, hubby wanted to let some steams out and we went out for few drinks. It was really nice casual night for us and we really enjoyed our time out. We kinda mixed drinks and dinner and that worked out perfectly. I had been craving something tex-mex kinda for few days already, and yesterday's plate was just perfection to make me one happy gal.
Definately not the most picturesque dinner, but so tasty! While living here in Mexico I have definately added new flavours into my daily life and in some way I have started to appreciate more complicated combinations in kitchen as well. Okay gotta admit, however I still love my Quarter Pounder from McDonald's and that will never change. Living in Mexico haven't only taught me about new food and flavours, but has also showed its tedious side as well. After some months here I started to have painful symptoms on my stomach, and seems like the different bacteria-base and ingredients just lead to IBS. Now after some months, I have learnt how important it is to listen my own body and also check how it reacts on certain ingredients. I try to live by FODMAP, but it is very difficult for me sometimes as I just cannot control my cravings. But on daily bases I try to avoid ingredients I know surely give me issues and this way I control what is happenin in my body. Living with problem like IBS is pretty much balancing and just trying to learn how to live with it. More than anything it has forced me to change my style a bit more comfortable and relaxed.

Today I knew from the start it is going to be one crazy long day, and well I wasn't wrong. Anyway decided to make the easiest brekkie and just throw some Kiwi and Banana on Waffles. Also wanted to have something a bit healthier after last nights food fiesta. I had this complicated history with Kiwis, as for long time I tought I am really allergic to them, until few months ago I decided its time to check this fact. Well I guess my body had miraculously found an immunity, and rest is history. I truly love Kiwis and some weeks ago I told this basically to anyone in the same room with me. I read these little green furry babies are perfect source for Vitamin C, Vitamin E and B5, as well as they are full of dietary fibers, folate and antioxidants. What makes them even better for me, they are great for people suffering from IBS. I am really bad at making any kinda smoothies or juices, and many fruits cause me allergies or irritation, so this renewed love with Kiwis really came on right time for me, as I had been struggling what fruits or veggies to choose on my grocery bag.
I am quite an amateour in the kitchen, but I like to make experiments and will definately try to make something special with Kiwis in near future. Any Kiwi lovers there on the other side of the screen?
